Can a lender ask different prospective clients for different information on the exact same kind of loan request, or would this be considered discriminatory? And if it is considered disriminatory, is there any recourse?

Lenders can ask anything that does not violate state and federal law. There is no requirement that they ask for the identical information from each applicant (that would be ridiculous as each applicant will have differences in his own financial history and background).
This question is too broad. I assume that a lender would have a form that a prospective borrower would have to fill out (a loan application) and that this would be the standard form given to all borrowers. No two borrowers are necessarily alike and different questions or more detailed question may be asked regarding a borrower's finances and ability to repay which go beyond the basics of the form.
Your post does not give any examples - I would think that questions about race, religion, gender may be treading on discriminatory grounds but it would depend on the context. Lots of things ask for gender and ethnicity, not because of discriminatory purpose, but because the company wants to see how many white/non-white or men/women or old/young people get a product or service. However, it depends on the context.
