Legal Question in Credit and Debt Law in Georgia

Payment to someone

I need to pay someone money I owe them but I want to ensure that they don't come back and say I didn't pay them. What is the best way to close the issue? Do I need to send them a certified letter with a check stating that if they cash it that all debts are resolved? They are threatening legal action.
