I want to know how can anyone get charged for a stole truck if we didn't know it was stolen

It happens frequently. You can be charged if you knew, or if a typical reasonable person would know. Since real transactions have titles and tags and other paperwork, any transaction lacking the normal paperwork is obviously suspect. Sounds like you need a lawyer. It's a serious felony with potential jail time.
You saying you did not know is not the same as actually not knowing. The prosecutor (and subsequently jury if it gets that far) has to ask himself about the circumstances surrounding your possession of the vehicle. Was it reasonable for you to have the vehicle under the circumstances? Who did you get the vehicle from? Your brother-in-law that has not held a job in three years, and has four drug arrests. If those are the circumstances, then you were on notice that the vehicle is sketchy. That is what young people say: "sketchy" Good luck
