Legal Question in Criminal Law in Georgia
I am the owner of a small business. When turning on the electricity for our office, I allowed an employee in upper management to do so in his name (mistake I now realize). As the business owner, I made all monthly payments. We have since closed that office and the employee has cashed the check for the deposit stating that the money is legally his, since his name is on the account. No money ever came out of this mans pocket. This man has stolen from me. Is there anything i can legally do to retrieve my money?

The bill was in his name. Absent a written agreement to the contrary, the money is arguably his. When you operate a business in a non-buisnesslike manner, the consequences are often bad for you.
Contrary to your post, he did not steal. Stealing is a crime. You can sue him if you wish, but how do you plan to prove that the deposit is yours when the paperwork will prove otherwise? That is a hurdle that you have to meet.
