if i go into someone's open garage and take back what i gave them, can that be burglary?

Yes, or breaking and entering. Either way, not a bright thing to try.

Yes; the burden on you is to prove it is yours - you can be charged with trespass and breaking and entering and criminal damage, etc.

Yes. If you "gave" something to the other person it belongs to him and you have no right to take it back. You certainly have no right to enter his garage without permission in order to do so. That the door was open did not mean you had the right to walk in, even if the items you took really belonged to you.
