Say I got the results of a breathalyzer test suppressed and it is no longer a factor in my case, can I still be prosecuted and lose my case solely based on the testimony of the police officer involved?

As I am sure your lawyer has told you (you do have one, do you not?), yes they can. A DUI less-than-safe conviction can occur with no test.
Given that you face up to 1 year in jail, a fine (which can top off including costs at about $1500 to $6000) and other consequences, you need a lawyer. I hope you have one.
