If a man becomes incapacited due to problems with surgery and ends up in a nursing home long term, what assets are his wife allowed to keep in the event that his care takes a great deal of their money?

That depends upon who is paying for the man's care. If you private pay it does not matter. However, if you are trying to qualify for Medicaid the couple must meet the income, asset and circumstances tests. When the applicant's assets are scrutinized some are counted and other are exempted. There is also a minimum amount that the couple is allowed to keep, depending on what benefits are sought.
