My father-in-law and the child live in florida and is an over the road truck driver, and the child's mother is incarcerated and looking at serving 2-3 years in prison. and we live in Georgia. What kind of legal paperwork will we need to make this temporary custody legal?

You need a lawyer. This could be hugely complex if the mother does not agree or simpler if both parents agree. This could require depending on details a probate court or juvenile court.
Contact your local probate court and ask what the procedure is for Temporary Guardianship. You can also visit gaprobate.org for the forms. If there is no agreement by both parents then you need to get a lawyer.
