My husband has been taking money out of our bank account in order to gamble. I have just discovered this. the account was originally mine - we added his name to it after we married. Can I take his name off the account without his knowledge and am I liable for his debt? he has opened 2 credit card accounts without my knowledge - am I liable for those debts too?

You can't undo what he has already done but you most certainly take his name off the bank account and the credit cards. You are liable on the credit cards only if you co-signed on the accounts.
