If issued a subpeona to produce my financial documents for a couples divorce proceedings, what are my overall obligations to produce all of my documents?
Also, can I plead the 5th, if questioned by the plaintiff's lawyer?

Your obligations are generally found in the subpoena, which normally carries the force of a court order. Objections to the production, and certainly pleading the 5th (for whatever reasons we do not know) are not matters to address to an internet forum. Get a lawyer.
If you fail to comply completely with a subpoena, you can go to jail for contempt. If you have valid legal objections, you'll need a lawyer to address them.
The 5th can only be claimed if you face criminal prosecution and you should not be considering that without a lawyer.
