Parental rights to a child
The biological father of my unborn child wanted no involvement at all, in fact insisted that I have an abortion. My fiance' is accepting the child as his own. In fact, he has told his entire family that the baby is biologically his. If he signs the birth certificate and a parental acknowledgment form (because we will not be married until after the birth), is it necessary for the biological father to sign away all his parental rights? I ask because I would then have to locate him, and I have no idea where he is. And if he does sign his rights away, does my fiance' then have to legally adopt my child, or will a parental acknowledgment for be suffice?

You have asked if you and your fiance should commit a criminal act in submitting a fradulent birth certificate. You could go to jail and once your fraud was discovered, your efforts could boomerang. There answer simply is "No" and in asking if you can commit a crime, every ethical lawyer will refuse to assist you.
Once you and your fiance are married, perhaps he will want to do a step-parent adoption and properly become the legal father. (Incidentally there is no such thing as "signing his rights away" except as part of an adoption).
