Can my groom-to-be and I write our own agreement, have it notarized, and have it be perfectly legal?

Sure, you can do your own prenup. Whether or not it will stand up in court is another matter. For one thing, the prenup may not even come into play for some time in the future. Will it have propertly addressed events that may take place in that time? You should consult with a local attorney.

Probably not. In fact the lack of counsel is a possible reason a court might not honor an agreement. It takes some specialized legal knowledge to right a solid prenuptial agreement, and the few dollars you'd "save" by skipping that will probably become a very expensive disaster in the future.
