My soon to be ex wife is trying to get for sole custody of our two children. What would this mean for me in regards to all aspects of my children's lives?

The fact that you omitted her proposed parenting plan which is necessary to answer you (is it sole legal, sole physical, or both, and what are the details) tells me you do not have a lawyer. Pro se litigants usually get disastrous unfixable results, so get a lawyer ASAP. She is either seeking to limit your time with the children, or freeze you out of decision-making or both. It is something where a lawyer's advice is invaluable.
