If accused does not show up for court....
Although I have plenty of evidence to prove my case, what
happens if the defendant does not show up for court? He never
replied to the serving of court documents and he will not reply to
any emails/phone calls that I send. And if I get the judgement I
seek, how hard is it to garnish his wages?

If he doesn't show up, and you do and present your evidence, you win. Filing a garnishment is easy; just fill out the forms in the clerk's office.
