If you visit with an escort who specifies certain age groups of races she will or not see be a cop.and if she is a cop, couldn't this be beat in court

No. Undercover arrests are fine except in the (very) rare cases that cross the line into entrapment. There is no rule that requires a police officer disguised as a criminal to act like an unbiased criminal.
