If a landlord adds any information or clauses to a lease after the perspective tenant has signed it, can it be considered null and void and gotten out of?

Terms to a contract cannot normally be added unilaterally by one party. Only when the other party consents do the terms become part of the agreement. So, in your situation, the original lease would still be in place and the new terms would not apply unless/until you agreed to them.
