Is there a document I can use to put a second mortgage on a piece of property I own without using a lawyer?

Sure. It's called a Deed to Secure Debt. Since its purpose is to protect you, you may be being "penny wise and pound foolish". It needs to be done correctly. Consult with a local attorney.

Aside from the questions that arise about what you are trying to do, handling such important matters yourself, when you do not even know when to start, is the best way to get you in trouble later.
