What if the person I bought the house from with a quickclam deed wants to go back on the deal

There's no such thing as a quickclam deed. Might you mean quickclaim deed?

There's no way I can analyze a real estate deal without seeing the deed, closing paperwork, and sales contract. I would hope you had your own lawyer review those in advance, as that is NECESSARY when you buy property. It is usually very foolish tobuy property via quitclaim deed as you have no seller promise as to title, so I have no clue why you would have done that, but hopefully you bought owner's title insurance and did a search so you'd be covered for title issues.

Usually you can't undo a sale, but if someone wants to, I'd need the facts to answer you as to what you should do. In any event, younow need to hire and pay a lawyer, and it will cost you more than getting one before the deal.
