my question is am i entitled to restituion for the full amount of what it would cost to replace a tree that was knocked down in my yard (i am the property owner) if i am not planning on replacing that tree?

Assuming you are entitled to damages (i.e., you didn't say who knocked down the tree or the surrounding circumstances), it is totally up to you whether you spend the money on a new tree or go on a cruise.
