first time hearing i owe them
I recieved Civil Action papers from carpet company claiming I owe them $3000.00 for work they did at an rental house I used to owned two years ago. I have no knowlege never of any water damage to the house, and in fact, I do the same kind of work. how do I defend against something i know nothing about?

By referring to "Civil Action papers" I assume this means you were sued, correct? Unfortunately, you must file an Answer in a timely manner. If you fail to do so, you will lose the claim by default in which case a judgment against you would be entered even though you know nothing about the claim. If this claim was filed in small claims (Magistrate) court you can file the Answer yourself and then appear in Court when notified, explaining to the Judge that you did not ever request the services or materials (nor consented to your Tenant doing same).

There's no real way to answer that question without reading the complaint and in this type of forum. You need to have an attorney review the allegations and file a response. Even if you know nothing about the facts, you must respond to the lawsuit within 30 days of service.
