The insurance company will probably eventually have to pay. It is only obligated to pay any damages for which its insured is found to be liable. As a practical matter, they evaluate cases and go ahead and try to settle IF they figure they will have to anyway. In this case, they may feel that your injuries must not have been too serious since you waited to go to the doctor. However, as long as you file suit within two years, there is no legal time within which you have to first go to the doctor. Contact a local attorney.
