Giving up my rights as an heir

My stepmother never probated my fathers will. He died 2 years ago. Since his death, she has sold or given away everything he had, including their house, his truck, boat, tools, etc...and most of it was to her kids, his stepchildren. She never even called me or my 3 siblings to give us the option to have anything. We are told that he left everything to her in his will, but if we don't sign, and we contest the will, is there any way we can recoup what should have been rightfully ours as his biological children??

You could seek help from the probate court by petitioning the court to demand she turn over the will to the court. However, if his will left everything to her you might not be entitled to anything. It will depend on how assets were owned and what the will says.
