retail stores
Do retail stores have the right to demand a physical address if I only have a PO Box on my personal checks?
Is there a law I can refer to or cite to protect my indentity
or personal info from potential identity theft?

No they have no right to that so pay cash.
Of course, you have no right to demand to pay by check.
If they take checks, they can set the requirements for that. ( 2 phone #'s, DL or Picture ID, Physical Address, Checks over #500 only, etc.)
