Child Guardianship or Custody

My daughter wants me to have legal guardianship or custody of her daugher if anything should happen to her. The father is no longer alive. She wants to write a will stating that I have legal custody of her daughter if something should happen to her. Or even make a written statement with it notarized. Can she do either of these, or does it have to be done in court? What is the difference between legal custody and legal guardianship?
