Legal Question in Business Law in Illinois
Why do companies have the right to record conversations ( for quality reasons ) but refuse to talk to a customer if the customer wants to record that same conversation they had with the company?
I like to record conversations because what companies say and do are two different things.
What are my rights?

You have the right to record conversations as long as the other party(ies) to the conversation are notified and allow it.

Mr. Messutta is correct. An alternative could be that you advise the company that you decline to give a statement unless they provide you a copy of the conversation.
