Evidence in civil case?
In civil court (chancery) does all the evidence from Plaintiff have to be included or at least mentioned specifically, in the original complaint? or can the Plaintiff introduce new, surprise evidence in court?

Evidence does not have to be mentioned in the complaint. But you have to normally give away your 'surprise' evidence due to rules about disclosure, and complete responses to discovery.
