what legal constrictions could i face if I opened up a bakery?

This is way too broad a question. There are so many depending on your particular concerns, for example: is the bakery wholesale or retail and is the building properly zoned for this and does this "use" require some kind of special zoning permission (special use permit, for example), business licensing, what kind of parking and loading requirements are there, is it in a shopping center where there is a grocery store that may have an "exclusive" on certain baked goods, will you need a permit to remodel the store to a bakery and will you need to make modificaitons that the landlord will have to approve, health department requiements, emissions issues depending on the kind of fuel, etc., signage issues and restrictions, are employment issues tied to any union contracts, etc., etc. So you either need to identify the specific area of concern, or if you have many get an attorney involved to help with the total process.
