Legal Question in Business Law in Illinois
I ran a small coffee shop in Palatine, IL that closed in December 2022. I called the village and filled out the appropriate form with the village to mark the business as closed. However, I continue to get threatening letters from the Finance Department about paying past due food and beverage taxes. Do I have any recourse against the village?

Recourse for what? Closing the business does not mean you no longer owe any taxes. So you either have a tax obligation or you don't. The principals that operated the business will be on the hook for the taxes not the business entity itself.
I agree with Frank, but I'd physically go to the Village Hall and talk to someone in the Finance Department about the time period(s) they claim the taxes are owed for. If you filed ST-1s with Illinois, by the way, that could prove one way or the other the last date that you had ROT obligations.......
