Starting a business - protection from liability

I'm trying to start a business where I will be the sole individual and my *main* concern above all else is protecting myself personally from lawsuits that could come about from the company (mainly because there is an unavoidable risk of accident in the company)

I've read a number of books with information about protecting myself from attempts to pierce the corporate veil (more difficult if I'm the only person).

How do I go about finding a lawyer with particular expertise in setting up the company in a way to protect me from liability and who can provide ongoing advice about this? Should I need someone with expertise in this area, or just any good lawyer?

There is a wide range of asset protection methods--from a corporation to Nevada trusts with offshore corporations. Most transactional attorneys would be able to help you set up a corporation, AND keep you up to date with the required documentation.
