''Payment in Full''

If a person writes a check and writes ''Paid in Full'' on the memo line on the front of a check, then it is deposited in the payee's bank account, is it legally binding if payment isn't paid in full?

Of course it isn't true. The memo line means absolutely nothing. There are ways under the UCC to accomplish something like what you are suggesting, but there has to be an actual good faith dispute regarding the amount owed. Remember, if it sounds too good to be true....
