I am being charged with theft of $300 in personal property based on he said she said. How can I prove my innocence?

I would strongly recommend you consult and retain a Criminal Defense attorney.
Theft crimes may not always carry heavy jail time/fines, but the social stigma attached with being convicted of theft is life long and will effect employment opportunities in the future.
