I got my pellet gun taken away by someone.

The other day, me and my friends were on the side of a country road shooting bb and pellet guns. These guns were only pump bb guns and did not require a foid card to buy. After a few minutes, a man came up in a truck and started yelling at us. He claimed that he was the owner of the property that we were on and threatened to call the cops on us. The man searched our car trunk and threatened to call the cops on us if we would not comply. He then took our guns and drove off. Can I file a police report for stolen possessions? What can I do in this situation?

Yes you can file a police report for stolen possession. Only the authorities can confiscate your personal property and even they oftentimes require a warrant to do so.

A citizen who takes your property has committed theft. He could have called the police (which is the proper avenue to resolve the dispute).

Be careful, if you involve the police you may be opening yourself up to charges if you were committing any crimes with your BB guns, but if your main goal is to get your BB guns back, file the police report.
