How much trouble can I get into for hitting somebody one time?

It's called battery. There are criminal penalties and potentially civil damages. And there are aggravating factors depending on the age, sex, whether the person you hit is a teacher or other public official, and other factors. And if this is not your first offense, or you have some other "history" that could affect things. Otherwise your question is too broad.
