Alzheimer's Patient POA
If I convince my mother I should be her POA without consulting my siblings and she signs it over to me, would that be legal since she has been diagnosed with Alzheimer's?

A poa from a patient with Alzheimr's is going to be contested. Your siblings would win that one. You have to petition the court for guardianship. Speak to a lawyer before you do anything else.

If mom is already diagnosed, you siblings could contest the power, based on the diagnosis.
