I am a assistant coach. If I signed a contract and the athletic director and head coach discuss cutting my pay without me present, is That legal ?

It would depend on the terms of the contract, and their reasons for cutting your pay. For example, if you did not attend, say, 1/3 of the games, and the contract requires you to be present at all games, I would say they probably are in the right.
