We have joint custody and I would like to know at what age do my children have a choice wheater or not to see their dad?

there is no magical age. As they get older, the courts tend to listen more. But "the best interest of the child" is always the standard, and trumps the children's interest. How old are they?

short answer is 18.

Longer answer is that the older they are they more choice they have. So a 6 year old would have no choice, a 12 year old a limited choice (or not) and a 16 year old might have a choice.
