Does it mean that a defendant will be taken into custody when a judge orders a Bond for a monetary amount in full cash?

Are you talking about for a criminal matter? A bond is the amount that must be paid before the defendant will be released from custody. It must be paid in full and with cash. Otherwise, in civil matters, bonds can be used for a variety of purposes. Without more information, it is difficult to answer your question.
