Paying a bill by check

If you pay a bill and write account paid in full on back of check where it is to be endorsed, and they deposit it can they try to get more money for the bill later

Depends. Who is owed the bill? Is there a live dispute about the amount owed? How long ago did they deposit the check? All of these things matter.
