artist release form
I had an artist do a concept drawing for a character I am developing for a animated video. I need him to sign a release form for that character so he can't come back and demand money. What kind of form do I need?

You need a present the artist with a work-for-hire agreement. It will read something like "in consideration of the of the fee of ____, Artist hereby transfers all right title and interest in and to the copyright of Work..." etc.
