Legal Question in International Law in Illinois

My spouse and I cannot believe we succumbed to the sales pitch in Mexico for a vacation club affiliated with the resort. When we returned home we weren't able to look at the paperwork timely and missed the window to cancel. If we just don't pay the monthly fee can/would they come after us?

Have an attorney review the paperwork. Without seeing it there's no way of telling what the club's remedies or your exposure may be. Having said that contracts "usually" are governed by the law of the place where the contract was made -- but some will say it will be some other place's law too.
