Non Compete accross Multiple States

If I signed a non compete for a company based in Illinois and leave that company, how does that affect/apply to work in other states?

That depends on the geographic scope of the restrictive covenant language, the state's laws that apply to the agreement and whether it is enforceable and such state's laws. You will need an attorney to review the agreement to give you a comprehensive answer.
