Signing papers

My boyfriend and I recently rented an apartment with--name removed--friend of mine. To make--name removed--long story short, things got ugly. Her boyfriend was staying over way too often without paying rent, and my boyfriend and I put our foot down. My roommate decided we were unfair and she wanted to move out. She has been harassing us every since, calling and texting every hour. She typed out--name removed--paper saying that we would find another roommate by the end of this month, or else we would have to take over the rent, and we all signed it. (She said that if we signed it, she would pay that month's rent and be out the next day - we wanted her gone asap.). After reviewing our bills, we think it is impossible to take over the rent without--name removed--roommate. We are looking for--name removed--roommate, but it is difficult. My question is - does the paper we signed actually means anything since it is not notarized? Does--name removed--signed paper have to be notarized prior to the signing, and is an un-notarized paper enough evidence to say we MUST take over the rent by the end of the month?
