When you are in a accident and it is your fault can the other party sue you for more if the insurance you have won't cover their demands?

Yes. The amount of insurance has nothing to do with the amount you may owe if a judgment is taken against you. You should work with your insurer to make sure that the amount asked is in fact the damages sustained and not just a number thrown out for good measure.
