Can I counter sue an ex-roommate?

My ex-roommate (former boss) was to live in my apartment temporarily. She took advantage of me by using my dog food, laundry detergent, etc. She refused to clean up after herself. I asked her to move out and she refused. Stated that she would stay as long as she wanted. My name is the only name on this apartment. I offered to return half of her half of the rent (she lived here 14 out of 30 days). Upon advice of the local police department and with my landlord's permission, I changed the locks and set her posessions on the front porch. She is now trying to sue me for rent and damage to property. I did not damage any of her property. She only had clothes and an air mattress.

Can I counter-sue for half of the water bill, consumed goods and the fact that I lost my job because of this situation?
