Can I use a scrivener's affidavit to correct the date the trust was created in a previous deed?

If I understand you correctly, a deed was recorded and the date of the grantor's trust or the grantee's trust was wrong, and now that is a problem. Normally the deed that was recorded needs to be corrected and re-recorded.
