If so dies does everything go into probate?

Yes, but that is not the worst part. If there is no will, the person who survives the other will get absolutely nothing. Everything the person who dies owns will go to the family of the person who dies, not to the significant other.

However, if you own property as joint tenants with rights of survivorship, a will should not be needed for said property, but you certainly would want to make sure the deed or title actually states that on it.
