if there are two executors of a will, do both executors have to sign the contract to sell real estate to be vaild?

Generally, yes, each is a co-executor who is required to approve each estate administrative action. A will could provide that each co-executor may act independently but few will provide for such administration unless the co-executors are spouses. So, it is necessary to read the will to have a clear understanding of all powers and duties of the executor.
