Legal Question in Wills and Trusts in Illinois

I live in Illinois and I would like my son, who is living in North Carolina, to be executor of my will. Can he live out of Illinois and still be my executor. Also does all your assets that are not in a trust have to go through probate or is there a dollar amount that will not go through probate. If this is true what is the dollar amount that will or won't go through probate.
