My wife's grandparents want to leave us their house, but they do not have a Will. What is the best way of ensuring their wishes are followed, avoiding as much legal complications as possible?

They should speak to an estate planning attorney, who will recommend that they setup an estate plan. The house can be left to the individual(s) of their choice and, with the right estate plan, should also avoid probate upon their deaths.

Your wife's grandparents should speak to an estate planning attorney. Very recently, Illinois created a law that allows people to put a beneficiary designation on real estate. This might be a good, cheap option for them. However, to be certain, they should speak to an attorney who is knowledgable about estate planning.
That being said, YOU should NOT contact an estate planning attorney for them. Your involvement could allow other family members to challenge any gift that your wife's grandparents make to you. Instead, give them phone numbers of attorneys who can assist them, and then stay the heck out of it!
