Wills in Illinois

If my mom has her sons listed as beneficiaries on the documents for all major assets (property, bank accounts), does she need a will? She lives in the state of Illinois.

Yes, she does. It will make transfer of the property simpler, it will give creditors notice that time has begun to run on making a claim, it will make paying for a funeral and other debts easier, and if there is anything else in the estate (such as personal property, cars, pets, etc) those things can be handled more easily as well.
